Lisa-san having fun with sushi!



For a long time, I've wanted to make sushi but was a little intimidated by it. Well, I'm glad I finally got over that mindset because it's actually pretty simple to make. On Valentine's Day, my husband and I enjoyed making it for dinner--using the ingredients we wanted to use and rolling our ultimate sushi creations! It's a fun and exotic activity for date night because it gets you both involved hands-on, and I think it would be a great idea for a casual dinner party too.

To start, I checked out a recipe in a new cookbook and also searched online for advice. I found a website called Post Punk Kitchen at http://www.theppk.com/recipes/vegansushi.shtml - this website had some great advice and I highly recommend their "Goin' back to Cali roll" - the only change I made was to add some baked tofu. I cut the baked tofu up into small julienned strips and then sauteed that for several minutes, adding a mix of BBQ sauce, white wine and spices to the pan halfway through and letting it reduce down for a few minutes. Then it's ready to use as one of the ingredients in your sushi (along with the avocado, cucumber, etc.) Mmm Mmm good! I also bought some wasabi powder which you can mix with a little bit of water to make wasabi paste - this also kicks things up a notch, and is great for clearing your sinuses! I was worried that I wouldn't be able to roll it up properly without a sushi rolling mat, but we were able to do a pretty good job without one. You want to try not to overstuff it. However, because they're inexpensive (around $5), I am heading over to Crate & Barrel this weekend to pick up a bamboo rolling mat and will report back soon!
