Caribbean fun with plantains
Go Caribbean for dinner tonight! Try some plantains - you can buy them at almost any market - they look like really large bananas - take them home and let them ripen until the skin has some black through it - then, simply peel them, cut them in half lengthwise and then crosswise and saute them in some virgin coconut oil...then, sprinkle some allspice on them and then saute the other side - serve them with mango chutney, with black beans and grilled zucchini on the side, topped off with a dash of chopped cilantro - you'll feel like you've flown to the islands!
